I saw one MORE post about this book yesterday and decided I need to buy it. Told my husband when he walked in the door "there's a book I need" and he threw back his head laughing. What? Just because we just got a whole box of books from Amazon this week doesn't mean there isn't another one we need!

I was really wondering whether the whole wheat recipe was any good, since that's what I'd be using most, I think, and, well, this has cleared it up for me. Now I HAVE to get this book. I honestly have no choice, do I?

Thanks for the recommendation!

That feeling of wonder never goes away. We were eating the light whole wheat last night and with every bite, "This is SO good!". My husband and children gave it the ultimate thumbs up in asserting that it doesn't even need butter.

I bake bread every day, but haven't used this book. I'll have to check it out.

(yesterday's loaf was homemade cinnamon swirl - 'twas grand)

Ah, life in the bread lane. So good.

I think sometimes I sound like a commercial talking about this book -- but it completely changed baking for me. We're now a house with homemade bread fairly often (not nearly daily, as we did at first). I have to admit that I have not switched over daily sandwich bread for the lunch boxes. But for dinner, parties, sweet breads for breakfast, etc.
I want to try to bagels and the doughnuts sometime soon.
Once you get comfortable with it, the beauty of it is that you can swap out other flours and grains (although you sometimes need to add vital wheat gluten -- per tips in the Healthy bread book).
I normally have a regular size batch nearly fill a 6-qt container. You'll definitely be happier with fresh yeast. I get instant yeast -- two 1-lb foil "bricks" at BJs (or Sam's or Costco) and keep the backup in the freezer, refilling a jar in the fridge for daily use. It makes a huge difference. I got the first batch before I got the book (when I just wanted to bake bread) and it was in the freezer a long time before I got through it all -- and it lasted right up until the end -- and that might have been almost 2 years.

Thanks for this one! I loved The Gammage Cup, and enjoyed the sequel, but I never heard of anything else Kendall wrote. It's on hold at the library right now.
